NUTRITIOUS PROPERTIES When talking about ENDIVE refers to a vegetable that shares its low energy content with other vegetables, given its low content of energy nutrients (carbohydrates, proteins and fats). Water is the element that predominates in the composition. In it are dissolved small amounts of water-soluble vitamins (B1, B2, C, folates - is the vegetable richest in this vitamin, with difference over the rest) and in a smaller proportion beta-carotene (provitamin A), as well as minerals like calcium, magnesium, iron, zinc and potassium, the latter the most abundant.
