The potato is a vegetable with a relatively important energy value, which is approximately 79 kcal / 100g, a value much higher than the energy contribution of many other vegetables. It has very important nutritional characteristics, highlighting its content in proteins and carbohydrates and not so much in fats. Its water content is around 79% of the total weight. Fat accounts for 0.1%, proteins 2.1% and carbohydrates stand out for representing 16.5% of the total weight. Minerals: of its mineral content we will highlight potassium, as it is the one that is found in a greater proportion. But we can also mention other minerals that are found in very important quantities, almost as much as potassium, and which are vital for the proper functioning of the organism: iron, magnesium, phosphorus and zinc, and in lesser amounts calcium. Vitamins: in terms of vitamin intake, we will find significant amounts of all, except vitamin B12, which is only found in foods of animal origin and vitamin A. We emphasize the vitamin C which is found in greater proportion followed of vitamin B6, although we also find significant amounts of vitamins B1, B2, niacin, folates and vitamin E in a much smaller proportion.
